Charleston Cheese Dip

This last Christmas, I got the cookbook Home Cooking with Trisha Yearwood. There are quite a few recipes that I want to try, so this next recipe comes from this cookbook. The recipe suggest to serve either crackers or tortilla chips with it.

  • 1/2 C mayonnaise
  • 1 8-ounce package cream cheese, softened
  • 1 cup grated cheddar cheese
  • 1/2 cup grated Monterey Jack cheese
  • 2 green onions, finely chopped
  • dash cayenne pepper
  • 8 Ritz crackers, crushed
  • 8 slices bacon, cooked and crumbled or Real Bacon crumbles

Preheat the oven to 350 degrees F.

In a medium bowl, mix the mayo, cream cheese, cheddar cheese, Monterey Jack cheese, green onions, and cayenne pepper.

Transfer the mixture into a shallow baking dish, such as a 9-inch pie pan.

Top the Mixture with cracker crumbs and bake for 15minutes, or until heated through. Remove the pan from the oven and top with bacon. Serve immediately with corn chips, crackers, or bagel chips.

I loved this recipe- but who really doesn’t love a cheesy dip with bacon on top?
